Ingredients
1 10 3/4-oz. can cream of mushroom soup
1 2-oz. pkg. dry onion soup mix
6 med. potatoes, cut into 1-inch pieces
6 med. carrots, thickly sliced
1 4-lb. boneless beef bottom round or chuck pot roast
Directions
Stir mushroom soup, soup mix, potatoes and carrots in a 3 1/2-qt. slow cooker. Top with roast and turn to coat. Cover and cook on LOW for 8-9 hours (or on HIGH for 4-5 hours) or until roast is fork-tender.

1/2 C. Half & Half
Salt and pepper to taste
1 1/2 lb. hamburger meat
1 large yellow onion, chopped
2 tsp. Worchestershire sauce
3 Tbs. taco sauce

2 C. cheddar cheese, shredded
1 12 oz. can French fried onions

Under cheesy+ creamy+ soups
This is based off of my mom’s broccoli casserole. To make this completely vegetarian, substitute vegetable broth for the chicken broth.

Ingredients
1 C. chopped onion
2 Tbs. butter
1 10 3/4-oz. can cream of mushroom soup
1/2 soup can of milk
3 C. cubed Velveeta cheese
5 C. chicken broth
2 10-oz. pkgs. frozen chopped broccoli, thawed
2 C. cooked rice
Garnish:
shredded cheese
sliced green onion
sour cream
Directions
Melt butter in a heavy saucepot. Saute onions until clear. Add mushroom soup, milk and cheese. Cook until well incorporated. Then add broth, broccoli and rice. Simmer for around 30 minutes.
Garnish with shredded cheese, green onions, and sour cream.

Ingredients
3 egg whites
1/8 tsp. salt, optional
1 C. sugar
2 tsp. water
1 tsp. vanilla extract
3 Tbs. unsweetened cocoa
Directions
Add whites and salt to bowl and with mixer, beat until peaks form. Add 1/2 cup sugar and combine. Combine water and vanilla in cup and gradually add to mixture, alternating with sugar. Add cocoa and combine well. Drop onto cookie sheet by teaspoon. Bake 30 minutes at 250 degrees. Remove to cooling rack and store in airtight container. If they are too hard they are over cooked.

Ingredients
1 2.75-oz. box orange Jello
1 15-oz. can chunky mixed fruits with no sugar added (i.e. peaches, pears, grapes, pineapple and halved cherries)
Directions
Make Jello as directed. Place in fridge for 2 hours. Drain juice from canned fruit and add to jello. Place back in fridge for another 2 hours or until set. Stir and serve!

1 1/2 Tbs. Kraft Balsamic Vinaigrette with Olive Oil or Kraft Greek Vinaigrette with Olive Oil
Leftover oven-roasted turkey
Lettuce
Tomato
Whole wheat tortillas
Directions
Tear leftover turkey into chunks. Take a tortilla and place lettuce, tomato and turkey on it. Pour 1-1 1/2 Tbs. vinaigrette on top and wrap, making sure you close both ends. Cut at an angle and serve with some low fat cottage cheese or yogurt.

Ingredients
1 1/4 C. water
1 1/2 Tbs. butter
1 box stuffing mix (turkey or chicken)
1 can flaky biscuits
1 lb. chunked turkey
1 envelope turkey gravy
flour
2 Tbs. butter for sealing, melted
Directions
Preheat oven to 350 degrees. For the box of stuffing, combine water and butter and heat up in microwave for 5 minutes. Add stuffing mix and set aside.Lightly flour your work space and roll biscuits out into a flat dough. Place 1 1/2 tsp. of stuffing in the middle. Top with turkey. As you fold one side at a time, seal the fold by brushing with butter. Place on a cookie sheet, fold down, and bake for 23 minutes at 350 degrees While baking, prepare gravy as directed on package.
