Rice and chicken dish that’s sweet and yummy! It looks great and is very colorful and easy to make. I was playing around with pineapple and chicken and came up with this, it has all of my favorite items in it.

1 box instant five-minute rice
4 boneless, skinless chicken breasts
equal parts of olive oil & butter
salt & pepper to taste
1 red onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1-2 lb. mushrooms, sliced
2 large cans pineapple chunks
pineapple juice
cornstarch
