Ingredients
* 1 lb. ground beef
* 1 can tomato soup
* 1/2 C. salsa
* 1/2 C. water
* 6 flour tortillas (6-inch), cut into 1 inch pieces
* 1/2 C. shredded Cheddar cheese
Directions
Cook beef in a 10-inch skillet until well browned, stirring to break up meat. Pour off fat. Stir in soup, salsa, water and tortillas. Heat to a boil. Reduce heat to low and cook for 5 minutes. Stir. Top with cheese.

Ingredients
* 2 pkgs. lg. lime gelatin
* 6 C. water
* 1 sm. container whipping cream
* 1 lg. pkg. cream cheese
* 1 lg. can crushed pineapple, drained
* 1 jar maraschino cherries, cut up
* 1 C. walnuts, crushed
Directions
Dissolve gelatin in 3 C. boiling water. Add 3 C. cold water and 1 C. pineapple juice. Chill in refrigerator until partially set. Whip the cream and add the soft cream cheese. Whip together. Add the gelatin and whip all together well. Fold in pineapple, cherries and walnuts to the preceding mixture. Put in a large ring mold. Put in refrigerator overnight. Unmold and put in platter.

* 1 Tbs. olive oil
* 1 lg. onion, coarsely chopped
* 2 tsp. finely chopped garlic
* 1 1-lb. bag frozen broccoli, carrots and cauliflower
* 1 15-oz. can red beans, drained, rinsed
* 1 15-oz. can garbanzo beans, drained, rinsed
* 2 cans (14.5 oz. each) diced tomatoes with green chilies, undrained
* 1 8-oz. can tomato sauce
* 2 C. frozen whole kernel corn
* 2 Tbs. chili powder
* 1 Tbs. ground cumin
* 3/4 tsp. salt
* 1/8 tsp. ground red pepper (cayenne)

Ingredients
1 16-oz. pkg fettuccine or linguine
2 Tbs. butter or margarine
1 med. onion, finely chopped
3 4-oz. pkgs. sliced wild mushroom blend, stems discarded and caps thinly sliced
2 garlic cloves, crushed with press
1/4 tsp. dried thyme
1/2 tsp. salt
1/4 tsp. pepper
1 14.5-oz. can reduced-sodium vegetable broth
1 C. loosely packed fresh parsley leaves, chopped
Directions
In large saucepot, cook pasta as directed. Meanwhile, in nonstick skillet, melt butter over medium heat. Increase heat to medium-high. Add mushrooms, garlic, thyme, salt and pepper and cook, stirring often, until mushrooms are golden and liquid has evaporated, 10 minutes.

1 12-oz pkg. curly wide egg noodles
1 Tbs. butter or margarine
1 Tbs. olive oil
1 jumbo onion, thinly sliced
1 sm. head savoy cabbage, thinly sliced, with tough ribs discarded
1/4 tsp. dried thyme
3/4 tsp. salt
1/4 tsp. black pepper
1 10-oz. pkg. frozen peas
1 C. vegetable broth
1/4 C. freshly grated Parmesan cheese
Directions
In large saucepot, cook pasta as directed. Meanwhile, in nonstick skillet, heat butter and oil over medium heat until melted and hot. Add onion and cook, stirring occasionally, until onion is tender and golden, about 20 minutes. Increase heat to medium-high; add cabbage, thyme, salt and pepper and cook, stirring occasionally, until cabbage is tender-crisp and golden, 5 minutes. Stir in frozen peas and broth; cook, stirring, 2 minutes. Drain noodles; return to saucepot. Add cabbage mixture and Parmesan; toss well.

2 C. spaghetti sauce (jarred or make your own)
8 oz. lasagna noodles
4 oz. part-skim mozzarella cheese, shredded
4 oz. low-sodium cheddar cheese, shredded
1/2 C. freshly grated Parmesan cheese (#1 blade)
2 Tbs. fresh basil, chopped

Ingredients
1 10 3/4-oz. can cream of mushroom soup
1 2-oz. pkg. dry onion soup mix
6 med. potatoes, cut into 1-inch pieces
6 med. carrots, thickly sliced
1 4-lb. boneless beef bottom round or chuck pot roast
Directions
Stir mushroom soup, soup mix, potatoes and carrots in a 3 1/2-qt. slow cooker. Top with roast and turn to coat. Cover and cook on LOW for 8-9 hours (or on HIGH for 4-5 hours) or until roast is fork-tender.

Ingredients
1 grilled chicken breast (leftover), chopped
1/4 C. white onion, chopped
1 piece roasted bell pepper, diced
5 green olives with pimento, diced
1 green onion, diced
1 celery stalk, diced
1 Tbs. salad dressing (i.e. Durkee’s Famous Salad Dressing)
Greek seasoning (i.e. Cavander’s Greek Seasoning)
dash (1 tsp.) Tony’s Chachere’s
1-2 basil leaves, chopped
handful fresh parsley, chopped
Directions
Mix all of the ingredients together in a bowl (the order doesn’t matter). Chill for at least 30 minutes or overnight.
Serve over mixed greens and sliced homegrown tomatoes on the side.

This home favorite is a layered dinner pie made with good ground beef, sliced potatoes, sliced onions, chicken broth, seasonings and a flaky top crust. The recipe was modified from one given to my mother in the early 50’s from a lovely Scandinavian woman. It’s great for leftovers if there are any!

1 can chicken broth or stock
1 pre-made or homemade pie crust
salt, pepper and garlic powder to taste
