Spinach Stuffed Chicken Recipe

Spinach stuffed chicken breast wrapped in bacon. This recipe is best served sliced and on a bed of wild rice and steamed asparagus. When I season the chicken I use salt, pepper, and garlic powder. This tastes very good to me and my family.

Ingredients

2 boneless, skinless chicken breasts
1 Tbs. minced garlic
1 Tbs. vegetable oil
10 lbs. spinach
1/4 C. sour cream
1/4 C. Pepper Jack cheese
4 slices bacon
4 toothpicks

Directions

Preheat oven to 375 degrees. Butterfly each chicken breast and season each side with desired seasonings.  With a mallet, pound the chicken breast to desired thickness. Set aside. In large skillet heat oil, add spinach and stir until wilted. Remove from heat. Stir in sour cream and cheese. Stuff each chicken breast with the stuffing. Roll the chicken up and wrap in bacon. Stick with toothpicks to hold bacon on. Bake on cookie sheet at 375 degrees for 35-45 minutes. Turn up heat to 400 degrees and bake for an additional 10-15 minutes or until bacon is browned. Remove toothpicks, slice chicken and serve. Garnish with extra cheese if desired.
