Porcupine Meatballs Recipe

A family favorite around our house. Serve with mashed potatoes and corn - it comes with it’s own gravy!

Ingredients

1 egg, beaten
1 can tomato soup
1/4 C. instant rice
2 Tbs. minced onion
1/2 tsp. salt
dash pepper
1 lb. ground beef
1/2 C. water
1 tsp. Worchestershire sauce

Directions

Combine egg and 1/4 C. of soup. Stir in uncooked rice, onion, salt. and pepper. Add ground beef and mix well. Shape into meatballs and place in skillet. Mix remaining soup with water and Worcestershire sauce; pour over top. Bring to a boil, reduce heat, cover and simmer 35-40 minute, Stirring occasionally to keep from sticking.
