Colorful Healthy Salad Recipe

This salad has a nice variety of tastes and textures. It is very versatile and can be an entree as well as a first course. It will also keep quite nicely mixed together for a day or two in the refrigerator.

Ingredients

3 red romaine lettuce leaves, washed and chopped
1/2 lg. carrot, peeled and grated
2 Tbs. finely chopped red cabbage
1/2 ripe avocado, cut into small pieces
1 Tbs. feta cheese, crumbled
2 Tbs. cottage cheese
2 Tbs. plain yogurt
2 Tbs. roasted sunflower seeds
salt, pepper, and crushed red pepper (optional) to taste

Directions

Mix all ingredients together and serve!

Note: To make this a main dish you can add 3-4 oz. tuna, salmon, steak, or chicken.  Cut the meat up into small pieces before adding.
