Under soups+ vegetables
For a healthy, veggie soup try this delicious recipe.

Ingredients
1 Tbs. oil
1 med. onion, diced
2 C. mixed frozen vegetables
2 1/2 C. water
1 8-oz. can whole tomatoes or 2 med. fresh tomatoes
3 cubes or 1 tsp. low-sodium beef bouillon powder
1/2 C. broken pieces spaghetti, uncooked
Directions
Heat the oil in a large pot over medium heat. Add the onion and vegetables to the hot oil and cook them, stirring occasionally, until they are lightly browned, about 10 minutes. Slowly add the water, the tomatoes with their liquid, and the bouillon cubes. Over high heat, heat the soup to boiling, stirring to break up the tomatoes. Reduce the heat to low. Cover and simmer for 20-30 minutes or until all vegetables are tender. Add spaghetti. Stir occasionally. Do not overcook.

Ingredients
4 Tbs. butter
1 med. onion, chopped
3 C. washed asparagus, cut in 1/2-inch pieces
1/4 C. all-purpose flour
1/4 tsp. salt
dash white pepper
1 1/2 C. chicken broth
1 C. half and half
Directions
Melt butter in 3-qt. saucepan and gently cook onion until soft. Add asparagus and cook 1 minutes. Stir in flour, salt and pepper until well blended. Gradually add broth, stirring constantly until thickened. Reduce heat to low, cover, and simmer 5-10 minutes until asparagus are fork tender. Stir in half and half.

2 C. cubed cooked turkey breast
3 Tbs. reduced-sodium soy sauce
1 egg, lightly beaten
1 small onion, chopped

Under cheesy+ creamy+ soups
This is based off of my mom’s broccoli casserole. To make this completely vegetarian, substitute vegetable broth for the chicken broth.

Ingredients
1 C. chopped onion
2 Tbs. butter
1 10 3/4-oz. can cream of mushroom soup
1/2 soup can of milk
3 C. cubed Velveeta cheese
5 C. chicken broth
2 10-oz. pkgs. frozen chopped broccoli, thawed
2 C. cooked rice
Garnish:
shredded cheese
sliced green onion
sour cream
Directions
Melt butter in a heavy saucepot. Saute onions until clear. Add mushroom soup, milk and cheese. Cook until well incorporated. Then add broth, broccoli and rice. Simmer for around 30 minutes.
Garnish with shredded cheese, green onions, and sour cream.

Quick and easy is what this delicious recipe is all about. It is even light enough to serve on warm days too.

Ingredients
2 sm. bags ravioli (or tortellini) (meat or cheese or mixed)
4 C. homemade or canned broth or stock (you pick the flavor)
1/2 C. shredded carrots
1 box frozen spinach, thawed
2 tsp. dried parsley
4 grinds black pepper
Parmesan for garnish
Directions
Cook pasta in salted boiling water about 3 minutes (they will continue cooking in broth). Drain pasta and add back to pot with remaining ingredients. Simmer, uncovered, about 5-8 minutes. You can add sliced chicken breast for a heartier soup. Serve with Keep Away the Vampires Cheesy Garlic Bread.

With Thanksgiving looming around the corner, I look for something new to make for dinner and try it out ahead of time - I liked this sweet potato soup. Found this one on another website. Sounds warm, creamy and good. I would substitute fat free evaporated milk to lessen calories and make it in the slow cooker.
