Ingredients
* 1 C. + 2 Tbs. all-purpose flour, sifted
* pinch salt
* 1 egg
* 1 1/4 C. milk
* 1/4 C. grated cheese
* 2 Tbs. grated onion
* 1/4 lb. noodles
* 2 Tbs. oil
Directions
Place the flour and salt in a mixing bowl. Make a batter by blending the egg and the milk, a little at a time. Stir in the grated cheese and onion, and let stand for 20 minutes. Break the noodles into short lengths and cook them in boiling, salted water for about 6 minutes. Drain thoroughly and add to the batter. Heat enough oil to grease the bottom of a skillet. Spoon the batter onto the pan to make a circle 4 inches in diameter. Cook gently until just set, then turn over and cook the other side. Repeat with the rest of the batter. Serve warm, with cream cheese and cranberry sauce.

Ingredients
6-8 artichokes
1 C. dill
1 C. tomato sauce
2 carrots, chopped
5 green onions, chopped
2 lbs. peas
1/2 C. oil
2 C. water
Directions
Sauté ingredients or place in pan in oven. Place oil in pan, including onions and dill. Sauté peas, carrots and fresh artichokes, which have been cut in 2. Combine artichokes with peas and sauté. Add tomato sauce and water. Cook for 1 hour.

Ingredients
1 C. mayonnaise or salad dressing
1 C. freshly grated Parmesan cheese
1 14-oz. can artichoke hearts, drained, coarsely chopped
1 9-oz. box frozen spinach, thawed, squeezed to drain
1/2 C. chopped red bell pepper
1/4 C. shredded Monterey Jack or mozzarella cheese
2 10-oz. loaves French baguette, cut into 1/2-inch slices (toasted if desired)
Directions
Spray inside of 1- to 2 1/2-quart slow cooker with cooking spray. In medium bowl, mix mayonnaise and Parmesan cheese. Stir in artichoke hearts, spinach and bell pepper. Spoon into slow cooker. Sprinkle with Monterey Jack cheese. Cover; cook on low heat setting 1 hour to 1hour 15 minutes or until cheese is melted. Serve warm with baguette slices. Dip is good for up to 3 hours.

Ingredients
1 16-oz. pkg. cavatelli pasta
2 Tbs. butter or margarine
3 Tbs. all-purpose flour
1/2 tsp. salt
1/4 tsp. black pepper
pinch ground nutmeg
3 1/2 C. low-fat milk
1 1/2 C. reduced-fat sharp cheddar cheese, shredded
1/3 C. grated Parmesan cheese
10-oz. pkg frozen mixed vegetables
Directions
Cook pasta as directed. Meanwhile, in 3-quart saucepot, melt butter over medium heat. With whisk, stir in flour, salt, pepper and nutmeg; cook, stirring constantly, 1 minute. Gradually whisk milk and cook over medium-high heat, stirring constantly, until sauce boils and thickens slightly. Boil, stirring, 1 minute.

Ingredients
1 Tbs. olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 small hot green chile, minced
1 C. long-grain brown rice
1 tsp. ground cumin
1/2 tsp. dried oregano
juice of 1/2 lime
1/4 C. chopped fresh cilantro
salt to taste
Directions
Heat oil in saucepan. Add onion, garlic, and chile, and saute over medium heat until golden.
Add rice and 2 1/2 cups water. Stir in cumin and oregano and bring to a simmer. Then cover and simmer gently until water is absorbed. This should take about 30 minutes.
Stir in lime juice and cilantro, then season with salt.

Ingredients
3 C. water
1 stick butter
2 cups self-rising white cornmeal
1/2 C. flour
1 C. sugar
3 eggs
1 1/2 C. whole milk
Directions
Preheat oven to 400 degrees. Put 3 C. water and one stick of butter in a pot. Bring to heavy boil. In large bowl, combine cornmeal, flour and sugar using a whisk. In small bowl, beat 3 eggs; beat in 1 1/2 C. milk. When water is boiling and butter melted, pour into dry ingredients. Then add milk and egg mixture, stirring until lumps are gone. Pour into greased 9×13-inch pan. Bake for 1 hour.

3 1/2 C. milk
2 C. water

1 tsp. salt
1 1/4 C. quick hominy grits
2 C. cheddar cheese, shredded
5 lg. eggs
1 tsp. hot pepper sauce
1/4 tsp. ground black pepper
Directions
Preheat oven to 325 degrees. Lightly grease shallow 2 1/2-quart casserole dish.
In 3-quart saucepan, combine 1 1/2 cups milk, water, butter, and salt; heat to boiling over medium-high heat. With wire whisk, gradually stir in grits, constantly beating to prevent lumps. Reduce heat; cover and cook, stirring occasionally with a wooden spoon, 5 minutes (grits will be very stiff). Remove from heat and stir in cheese.

4 oz. chopped onion
1 1/2 oz. celery, weighed
2 qts. canned tomatoes
1 qt. tomato puree
Directions
Brown ground beef and add onions and celery. Add tomtoes and cook for 20 minutes. Salt to taste. Add macaroni and heat thoroughly, about 5 minutes.
