This was a potato salad recipe that my grandma passed down to my mother who then gave it to me. I’ve made it for many barbecues and I’m now asked to bring it to every barbecue I’m invited to. My husband really likes it!

Directions
Just like a potato, pierce the skin of the squash with a fork or knife to well ventilate. Put on a plate and microwave on high according to the size of the squash, turning over about every 2-3 minutes. (I used a small butternut squash and it took about 7 1/2 minutes to fully cook. Add more time for larger squash.)
