Under beans+ sandwiches
If you want a little more zing, add about 1/4 cup pickled okra to the bean mixture.

Ingredients
- 2 15-oz. cans dark red kidney beans, drained, rinsed
- 1 egg
- 1/4 C. unseasoned dry bread crumbs
- 2 tsp. Cajun or Creole seasoning
- 1 Tbs. vegetable oil
- sour cream, if desired
Directions
In medium bowl, mash beans with fork. Stir in egg, bread crumbs and Cajun seasoning. With wet hands, shape mixture into 4 patties, 1/2-inch thick. In 10-inch skillet, heat oil over medium-high heat. Add patties; cook 6 to 8 minutes, turning once, until hot. Serve with sour cream if desired.

This recipe is quick, healthy and provides a great energy-boosting lunch. It will help you avoid the late afternoon blahs!

Ingredients
1 grilled chicken breast (leftover), chopped
1/4 C. white onion, chopped
1 piece roasted bell pepper, diced
5 green olives with pimento, diced
1 green onion, diced
1 celery stalk, diced
1 Tbs. salad dressing (i.e. Durkee’s Famous Salad Dressing)
Greek seasoning (i.e. Cavander’s Greek Seasoning)
dash (1 tsp.) Tony’s Chachere’s
1-2 basil leaves, chopped
handful fresh parsley, chopped
Directions
Mix all of the ingredients together in a bowl (the order doesn’t matter). Chill for at least 30 minutes or overnight.
Serve over mixed greens and sliced homegrown tomatoes on the side.

This is an inexpensive meal that is quick and delicious! You can use leftover turkey for this one.

Ingredients
1 1/4 C. water
1 1/2 Tbs. butter
1 box stuffing mix (turkey or chicken)
1 can flaky biscuits
1 lb. chunked turkey
1 envelope turkey gravy
flour
2 Tbs. butter for sealing, melted
Directions
Preheat oven to 350 degrees. For the box of stuffing, combine water and butter and heat up in microwave for 5 minutes. Add stuffing mix and set aside.Lightly flour your work space and roll biscuits out into a flat dough. Place 1 1/2 tsp. of stuffing in the middle. Top with turkey. As you fold one side at a time, seal the fold by brushing with butter. Place on a cookie sheet, fold down, and bake for 23 minutes at 350 degrees While baking, prepare gravy as directed on package.

Under bread+ cheesy+ pizza+ sandwiches
Instead of the boring old grilled cheese sandwich try a grilled cheese pizza sandwich with mozzarella and marinara sauce! It tastes just like cheese pizza with less fat and without all the grease and calories! I got bored and decided to try something new….a completely random idea made an awesome lunch!

Ingredients
2 slices mixed grain bread
2 Tbs. marinara sauce
1/4 C. mozzarella cheese (low moisture, part skim)
1 tsp. shredded Parmesan cheese
salt and pepper to taste
Directions
Spread 1 tablespoon of marinara sauce on each piece of bread. Spread mozzarella cheese evenly, on side with sauce, on first piece of bread. Sprinkle Parmesan cheese over mozzarella. Top with second piece of bread, sauce side down. Place in heated pan and cook until cheese inside is melted and outside is golden brown…or darker if you like.

bologna meat, chopped
mayonnaise or salad dressing
dill pickles, chopped
hard boiled eggs, chopped
onions, chopped
Directions
ChopĀ up your ingredients: bologna, hard boiled eggs, dill pickles and onion. Add a little bit of mayonnaise. Mix together in mixer. Spread on bread to make sandwiches. You can refrigerate this mixture overnight.
