Under beans+ budget cooking+ potatoes+ salads
My mom used to prepare this salad with grilled meats. It is fresh and light and stands up well to the summer heat.

Ingredients
1 lb. string beans, tips trimmed and sliced in half
3/4 lb. red potatoes, quartered
1 small red onion, sliced
1/4 C. Kalamata olives, sliced and pitted (optional)
Dressing:
1/4 C. red wine vinegar or more to taste
2 cloves garlic, shredded
4 grinds black pepper
Pinch salt
1/4 tsp. oregano
1/4 tsp. onion powder
1/4 C. olive oil

Easy, great dish anytime of the year. If you like spicy add more crushed pepper.

6 ears corn off the cob or 1 bag frozen corn
1 large onion, diced
1 medium green pepper, diced
1 Tbs. wet crushed pepper
1 tsp. chopped garlic
Salt
Pepper
2 Tbs. olive oil
4 Tbs. butter
1/2 tsp. basil

This is my version of my grandmother’s recipe. Everyone tells me it’s the best they’ve ever eaten. So when we have get togethers, guess who gets to make the potato salad!
