Under potatoes+ salads
This potato salad recipe features bacon and onions.

Ingredients
6 potatoes, boiled and peeled
1 sm. onion, thinly sliced and separated into rings
3 to 4 slices bacon, microwaved until crisp, then crumbled
3 oz. vegetable oil
1 oz. cider vinegar
1/4 tsp. oregano
salt and pepper to taste
1 Tbs. water
Directions
Slice potatoes thin, put in bowl, and stir in rest of ingredients. Sprinkle dried chives on top. Serve at room temperature. Bratwurst or any other German wurst complements this.

This recipe won’t take much time at all. It’s great for a picnic!

Ingredients
1 box spiral pasta, cooked, drained and cooled
1 lg. cucumber, cut in chunks
1 onion, cut in chunks
1 1/2 C. vinegar
1 1/2 C. sugar
2 tsp. mustard
1 tsp. salt
Directions
Cut cucumber with peel, and onion in chunks and put in blender. Add rest of ingredients and blend. Pour over cooked pasta and let sit for 12 hours in refrigerator before serving.

1 can green beans
1 can kidney beans
1 onion, chopped
1/2 C. vinegar
1/2 C. vegetable oil
3/4 C. sugar
1 tsp. salt
1tsp. pepper
Directions
Combine all the ingredients and refrigerate for 6 hours before serving.

This pasta salad uses fun shapes and colorful vegetables to make a dish that will please the whole family.

Ingredients
8 oz. uncooked rotelle, pasta shells, or elbow macaroni
2 C. small broccoli florets
2 medium carrots, peeled and slices diagonally
1/2 C. pitted black olives
1/2 C. cooked fresh corn kernels (or frozen corn kernels, thawed)
1/3 C. vinaigrette or dressing of your choice
salt to taste
Directions
Cook the pasta according to package directions. Just before it’s done, add the broccoli and carrots to the water and allow to cook for 1 to 2 minutes. Drain and rinse pasta and veggies until cool. Combine with olives, dressing, and corn in a large bowl. Season with salt.

This orange Jello salad recipe is cool and delicious! You can serve it anytime.

Ingredients
1 2.75-oz. box orange Jello
1 15-oz. can chunky mixed fruits with no sugar added (i.e. peaches, pears, grapes, pineapple and halved cherries)
Directions
Make Jello as directed. Place in fridge for 2 hours. Drain juice from canned fruit and add to jello. Place back in fridge for another 2 hours or until set. Stir and serve!
