Under fruit+ salads
This orange Jello salad recipe is cool and delicious! You can serve it anytime.

Ingredients
1 2.75-oz. box orange Jello
1 15-oz. can chunky mixed fruits with no sugar added (i.e. peaches, pears, grapes, pineapple and halved cherries)
Directions
Make Jello as directed. Place in fridge for 2 hours. Drain juice from canned fruit and add to jello. Place back in fridge for another 2 hours or until set. Stir and serve!

Found this recipe in an old cookbook about 40 years ago. I have perfected like I wanted it and now it does taste really good on a hot summer day.

Ingredients
* 16 oz. elbow macaroni
* 1 each med. green and red bell pepper, seeded and chopped
* 1 C. mayonnaise
* 1 Tbs. cider vinegar
* 1/2 tsp. sugar
* 1 tsp. each salt and pepper
* 1 C. chopped celery
* 1 med. onion, chopped
* Zest of 1 lemon
* Grape tomatoes for garnish

This salad has a nice variety of tastes and textures. It is very versatile and can be an entree as well as a first course. It will also keep quite nicely mixed together for a day or two in the refrigerator.

3 red romaine lettuce leaves, washed and chopped
1/2 lg. carrot, peeled and grated
2 Tbs. finely chopped red cabbage
1/2 ripe avocado, cut into small pieces
1 Tbs. feta cheese, crumbled
2 Tbs. cottage cheese
2 Tbs. plain yogurt
2 Tbs. roasted sunflower seeds
salt, pepper, and crushed red pepper (optional) to taste

My mom used to prepare this salad with grilled meats. It is fresh and light and stands up well to the summer heat.

1 lb. string beans, tips trimmed and sliced in half
3/4 lb. red potatoes, quartered
1 small red onion, sliced
1/4 C. Kalamata olives, sliced and pitted (optional)
Dressing:
1/4 C. red wine vinegar or more to taste
2 cloves garlic, shredded
4 grinds black pepper
Pinch salt
1/4 tsp. oregano
1/4 tsp. onion powder
1/4 C. olive oil
