Under budget cooking+ rice+ soups
My husband, our two kids and I enjoy this deliciously different fried rice dish. The brown rice makes it extra nutritious… and it’s a great way to use up leftover cooked turkey.

Ingredients
2 C. reduced sodium chicken broth
1 C. uncooked brown rice
2 C. cubed cooked turkey breast
3 Tbs. reduced-sodium soy sauce
1 egg, lightly beaten
1 small onion, chopped
1/4 C. chopped peas
1/4 C. chopped carrots
1 Tbs. canola oil

I got this recipe from a friend many years ago. It is a favorite at family gatherings.

Ingredients
2 boxes instant wild rice
1 16 oz. carton sour cream
1-3 cans green chilis
8 oz. mozzarella cheese, grated (more if desired)
Directions
Prepare rice according to package directions. Mix together sour cream and green chilis. Grease a casserole dish. Layer rice, sour cream mixture, and cheese in casserole dish. Repeat in same order reserving cheese to be added later. Bake uncovered at 350 degrees for 30 minutes or until bubbly. Sprinkle reserved cheese on top and return to over for 5 minutes.

This is a tangy recipe that uses rice instead of spaghetti to make a spicy Italian Rice. The spices come from the sausage. Add a salad and some garlic bread and you have a hearty satisfying meal.
