Under potatoes
This is a really easy side dish that basically just consists of potatoes and tomato sauce.

Ingredients
- potatoes
- 8-oz. no-salt tomato sauce
- salt, to taste
- pepper, to taste
- cinnamon, to taste
Directions
Clean and cut potatoes in sliced. Fry potatoes in oil. Add sauce. Add a pinch of salt, pepper and cinnamon. Simmer for 5 minutes.

Ingredients
6 potatoes, boiled and peeled
1 sm. onion, thinly sliced and separated into rings
3 to 4 slices bacon, microwaved until crisp, then crumbled
3 oz. vegetable oil
1 oz. cider vinegar
1/4 tsp. oregano
salt and pepper to taste
1 Tbs. water
Directions
Slice potatoes thin, put in bowl, and stir in rest of ingredients. Sprinkle dried chives on top. Serve at room temperature. Bratwurst or any other German wurst complements this.

Ingredients
4 lbs. corned beef
6 carrots, quartered
2 turnips, diced
8 sm. onions
6 potatoes, quartered
1 cabbage head, cut in wedges
Directions
Cover meat with cold water. Bring to a boil. Cook very slowly for 4 hours. Remove meat. Bring broth to boil and add carrots, turnips and onions. Cook for 15 minutes. Add potatoes. Cook for 15 minutes. Add cabbage. Cook for 15-20 minutes. Add meat, cut in pieces. Heat. Arrange meat on platter, vegetables in serving dish.

Salt and pepper to taste
1 1/2 lb. hamburger meat
1 large yellow onion, chopped

2 C. cheddar cheese, shredded
1 12 oz. can French fried onions

This recipe is one my mother used to make when we were growing up. It works great on the grill or even the oven, but the best way to make them is in a campfire! It adds that unique smoky flavor. It’s a great way to use some leftovers too.

6 cubed potatoes with skins on
3 sliced smoked sausage or plain sausage or keilbasa
1 large onion, diced
1 1/2 C. milk
1 can cream of mushrooms soup
Salt and pepper, to taste
Directions
Put all ingredients in crockpot and cook on high for 4 hours or low for 7 hours.
