Under budget cooking+ pies+ summer
This herbed tomato pie is very easy to make. It’s make a great side dish or a healthy lunch! It’s pretty to look at and tasty too!

Ingredients
9-inch pie crust
3-4 tomatoes, sliced
1/2 C. fresh chives, chopped
2 Tbs. fresh basil, chopped
salt and pepper to taste
2 C. shredded mozzarella cheese
1/2 C. mayonnaise

This is a quick and easy recipe for shepherd’s pie that is perfect for parents on the move!

Ingredients
1 lb. ground turkey (or ground beef)
1 Tbs. dried onion
1 20-oz. can vegetable soup
1 can creamed corn
1 box instant mashed potatoes
1/2 C. shredded cheddar cheese
Directions
Brown the ground turkey and dried onion. Drain. Put meat into a casserole dish. Add vegetable soup and creamed corn. Mix well. Prepare instant potatoes per box directions. Spread potatoes on top of mixture. Bake at 400 degrees for 20 minutes. Spread cheese across potatoes and bake for additional 5 minutes. Cool and serve.

1/2 C. Original Bisquick mix
1/2 C. sugar
1 C. evaporated milk
1 Tbs. butter or margarine, softened
1 1/2 tsp. pumpkin pie spice
1 tsp. vanilla
2 eggs
Whipped topping, if desired

This spaghetti pie is quick, easy and very delicious! I take this to potlucks a lot and always get compliments.

2 gloves garlic or use granulated garlic
2 sm. cans tomato paste
1 sm. box angel hair spaghetti
1 sm. carton small curd cottage cheese
2 eggs, beaten

1 12-oz. pkg. shredded mozzarella cheese

It is very simple and easy to make and at the same time it is a full course meal in itself. It’s cheap too! I have never found anyone yet that did not enjoy it, I think you and your family will enjoy it too.

This dish is light and fluffy, sweet yet tart and super easy to make with little prep time involved. Makes a Wonderful Valentine’s Day or Christmas Dessert due to it’s color and ease of preparation.
