Under beef+ casseroles+ creamy+ hamburger+ meat+ potatoes
This quick and easy dish has a little bit of everything. With a combination of meal, potatoes, cheese and a crunchy topping it’s a great comfort food for those cold winter nights when you just want to curl up under a blanket and watch a good movie.

Ingredients
5 red potatoes, boiled and mashed
1 C. sour cream
2 Tbs. butter
1/2 C. Half & Half
Salt and pepper to taste
1 1/2 lb. hamburger meat
1 large yellow onion, chopped
2 tsp. Worchestershire sauce
3 Tbs. taco sauce
Salt and pepper to taste
2 C. cheddar cheese, shredded
1 12 oz. can French fried onions
Directions
Preheat oven to 350 degrees.

Shepherd’s Pie is a traditional English recipe. Since I was American and my husband was British, I tried to change this wonderful recipe for the American palate. I hope you enjoy it because we do.

Ingredients
2 lb. ground chuck
1 large onion, diced
1 tsp. garlic powder
1 tsp. salt
Black pepper to taste
1 8 oz. pack mushrooms, cleaned and cut
2 C. frozen peas
2 packs brown gravy mix
1 C. water
1 8 oz. pkg. shredded cheddar cheese
8 nice size potatoes
1/4 C. milk
1/4 C. butter

I make this a lot during summer months. Season as you would stuffed green peppers. Simple for dinner and uses those big zucchini!

Ingredients
1 large zucchini
1 can chopped tomatoes
1 C. cooked rice
1 lb. hamburger meat
1 medium chopped onion
Cheese (optional)
Directions
Slice zucchini in half and scoop out seeds. Brown hamburger and onions and drain. Add remaining ingredients and mix together in same pan. Fill zucchini boats and top with favorite cheese. Bake on a cookie sheet for 30 minutes at 350 degrees F.

Ingredients
2 lb. ground beef
1 large tomato, diced into small cubes
2 packets taco seasoning
3 C. shredded lettuce
2 bricks Philadelphia cream cheese
2 C. shredded Colby/Monterey jack
1 16 oz. sour cream cheese
1 16 oz. jar mild salsa
1 large bag tortilla chips
Directions
Brown beef on medium high heat. When almost cooked, add the packets of taco seasoning and mix well. Remove from heat and let cool. In a bowl, blend together the cream cheese and the sour cream. Once the beef has cooled, layer on the bottom of a 9×13 inch casserole. Layer the cream cheese and sour cream mixture over the beef. Followed by the salsa, tomatoes, lettuce and finishing it off with the Colby/Monterey jack cheese.

One day I was sitting and had a taste for stuffed cabbage, but after a long day I did not feel like starting such a large cooking adventure. So “voila” my casserole was born!

Ingredients
1/2 small head cabbage, shredded
1 large onion, shredded
1-1 1/2 lb. ground meat (use turkey for lighter version)
3 slices white bread, crusts removed
1 large egg
1/4 C. milk or water
2 C. cooked rice, cooled
1 large can diced tomatoes
1 small jar plain spaghetti sauce
Salt, pepper and garlic powder to taste
Directions
Put bread in a large mixing bowl and cover with milk. Let absorb for a while, then add egg, ground meat and seasonings. Mix until thoroughly blended.

This is an easy way to have a low fat, high flavor dinner that will make the whole family say WOW!

Ingredients
4 oz. Kikkoman Teriyaki Baste & Glaze
1 small onion, sliced and chopped
1/2 green pepper, sliced
2 Tbs. oil
1 lb. carne picada, extra thin
1 C. brown rice
2 C. water
Salt and pepper to taste
Directions
Place water and brown rice in saucepan and cook for 45-50 minutes. Season with salt and pepper to taste. Meanwhile, in skillet put oil, green pepper, onion and 1 Tbs. teriyaki glaze. Saute until done, set aside. In same skillet combine steak (carne picada) and remaining teriyaki glaze and cook for 10 minutes or until done. Put rice on plate. Top with steak and sauted veggies.

Chicken breasts broiled with an herb butter seasoned with garlic, parsley, rosemary and thyme. Comes out nice and juicy!

Ingredients
4 skinless, boneless chicken breast halves
1/2 C. butter, softened
3 cloves garlic, minced
1 tsp. dried parsley
1/4 tsp. dried rosemary
1/4 tsp. dried thyme
Directions
Preheat oven to broil/grill and line broiler pan with aluminum foil. Place chicken on pan. In a small bowl combine the butter, garlic, parsley, rosemary and thyme and mix together, then evenly spread a dollop of mixture on each chicken breast. Broil in preheated oven, turning and frequently coating with remaining herb/butter mixture, for about 15 minutes or until chicken juices run clear.
