Under General+ leftovers+ main course+ pasta+ sauces+ vegetables
If you have Eggplant Parmesan leftovers, this dish makes a quick weeknight past dinner! Serve with salad and crusty bread.

Ingredients
1 16-oz. pkg rigatoni or fusilli pasta
2 C. tomato sauce reserved from Eggplant Parmesan
1 quarter (about 6″ by 4″ piece) reserved Eggplant Parmesan cut into 3/4-inch pieces (about 2 1/2 C.)
Directions
In large saucepot, cook pasta as directed. Meanwhile, in 2-quart saucepan, heat tomato sauce and cut-up Eggplant Parmesan over medium heat, stirring occasionally, until hot, about 15 minutes.
Drain pasta, reserving 1/4 cup pasta water. Return pasta to saucepot; add eggplant mixture and reserved pasta water and toss well.

This is very quick to make. There is no cooking required because you are using leftover turkey.

Ingredients
1 1/2 Tbs. Kraft Balsamic Vinaigrette with Olive Oil or Kraft Greek Vinaigrette with Olive Oil
Leftover oven-roasted turkey
Lettuce
Tomato
Whole wheat tortillas
Directions
Tear leftover turkey into chunks. Take a tortilla and place lettuce, tomato and turkey on it. Pour 1-1 1/2 Tbs. vinaigrette on top and wrap, making sure you close both ends. Cut at an angle and serve with some low fat cottage cheese or yogurt.

This is an inexpensive meal that is quick and delicious! You can use leftover turkey for this one.

Ingredients
1 1/4 C. water
1 1/2 Tbs. butter
1 box stuffing mix (turkey or chicken)
1 can flaky biscuits
1 lb. chunked turkey
1 envelope turkey gravy
flour
2 Tbs. butter for sealing, melted
Directions
Preheat oven to 350 degrees. For the box of stuffing, combine water and butter and heat up in microwave for 5 minutes. Add stuffing mix and set aside.Lightly flour your work space and roll biscuits out into a flat dough. Place 1 1/2 tsp. of stuffing in the middle. Top with turkey. As you fold one side at a time, seal the fold by brushing with butter. Place on a cookie sheet, fold down, and bake for 23 minutes at 350 degrees While baking, prepare gravy as directed on package.

Under leftovers+ stew
I had fixed a beef brisket with potatoes, carrots, and onions. Since there is only two of us, I had a lot leftover, not wanting the trash it, I froze it. I wanted a quick meal so I tried this and it was really good! The potatoes cooked up, causing it to get thick.
