Ingredients
* 6 oz. green lasagna noodles
* salt
* 1 Tbs. butter
* 2 1/2 C. thick Bolognese sauce
* 2 1/2 C. white sauce
* 1/2 C. grated Parmesan cheese
Directions
Boil the green lasagna noodles in salted water for 5 minutes or until tender. Rinse in cold running water, drain and dry. Preheat oven to 375 degrees. In a buttered, ovenproof dish, arrange a layer of lasagna, topped by a layer of Bolognese sauce and then one of the white sauce. Repeat. Sprinkle the grated cheese over the top and bake for 30 minutes. Serve hot.

Ingredients
* 2 pkgs. lg. lime gelatin
* 6 C. water
* 1 sm. container whipping cream
* 1 lg. pkg. cream cheese
* 1 lg. can crushed pineapple, drained
* 1 jar maraschino cherries, cut up
* 1 C. walnuts, crushed
Directions
Dissolve gelatin in 3 C. boiling water. Add 3 C. cold water and 1 C. pineapple juice. Chill in refrigerator until partially set. Whip the cream and add the soft cream cheese. Whip together. Add the gelatin and whip all together well. Fold in pineapple, cherries and walnuts to the preceding mixture. Put in a large ring mold. Put in refrigerator overnight. Unmold and put in platter.

Ingredients
3 1/2 C. fresh sliced crimini mushrooms
3 Tbs. butter
8 eggs
1/3 C. whole milk
1/2 tsp. salt
1/4 tsp. black pepper
1/2 C. chopped fresh basil leaves
1/2 C. shredded cheese of your choice
Directions
Preheat oven to 350 degrees and melt butter in a nonstick skillet over medium heat. Add mushrooms and cook for about 5 minutes. Whisk milk, eggs, and pepper together, then mix in basil and cheese. Pour mixture into skillet with the mushrooms. Place in oven for 30 minutes or until egg is no longer runny.

Ingredients
1 C. mayonnaise or salad dressing
1 C. freshly grated Parmesan cheese
1 14-oz. can artichoke hearts, drained, coarsely chopped
1 9-oz. box frozen spinach, thawed, squeezed to drain
1/2 C. chopped red bell pepper
1/4 C. shredded Monterey Jack or mozzarella cheese
2 10-oz. loaves French baguette, cut into 1/2-inch slices (toasted if desired)
Directions
Spray inside of 1- to 2 1/2-quart slow cooker with cooking spray. In medium bowl, mix mayonnaise and Parmesan cheese. Stir in artichoke hearts, spinach and bell pepper. Spoon into slow cooker. Sprinkle with Monterey Jack cheese. Cover; cook on low heat setting 1 hour to 1hour 15 minutes or until cheese is melted. Serve warm with baguette slices. Dip is good for up to 3 hours.

Time Needed: 10 minutes preparation + 70 minutes cooking
Ingredients
1 bulb garlic, unpeeled
2 tsp. olive oil
1 15-oz. can great northern beans, drained, 2 Tbs. liquid reserved
3 Tbs. lemon juice
1/2 tsp. salt
Chopped fresh parsley
4 pita brads, each cut into 8 wedges
Directions
Heat oven to 350 degrees. Cut 1/2-inch slice off top of garlic bulb. Drizzle oil over garlic bulb. Wrap garlic in foil. Bake 50 to 60 minutes or until garlic is soft with pierced with a knife. Cool slightly, about 10 minutes. Squeeze garlic into food processor. Add beans, reserved bean liquid, lemon juice and salt. Cover; process until uniform consistency. Spoon dip into serving dish. Sprinkle with parsley. Serve with pita bread wedges.

pinch ground nutmeg
3 1/2 C. low-fat milk
1 1/2 C. reduced-fat sharp cheddar cheese, shredded
1/3 C. grated Parmesan cheese
10-oz. pkg frozen mixed vegetables
Directions
Cook pasta as directed. Meanwhile, in 3-quart saucepot, melt butter over medium heat. With whisk, stir in flour, salt, pepper and nutmeg; cook, stirring constantly, 1 minute. Gradually whisk milk and cook over medium-high heat, stirring constantly, until sauce boils and thickens slightly. Boil, stirring, 1 minute.

This is based off of my mom’s broccoli casserole. To make this completely vegetarian, substitute vegetable broth for the chicken broth.

Ingredients
1 C. chopped onion
2 Tbs. butter
1 10 3/4-oz. can cream of mushroom soup
1/2 soup can of milk
3 C. cubed Velveeta cheese
5 C. chicken broth
2 10-oz. pkgs. frozen chopped broccoli, thawed
2 C. cooked rice
Garnish:
shredded cheese
sliced green onion
sour cream
Directions
Melt butter in a heavy saucepot. Saute onions until clear. Add mushroom soup, milk and cheese. Cook until well incorporated. Then add broth, broccoli and rice. Simmer for around 30 minutes.
Garnish with shredded cheese, green onions, and sour cream.
