Under chicken+ sandwiches
This recipe is quick, healthy and provides a great energy-boosting lunch. It will help you avoid the late afternoon blahs!

Ingredients
1 grilled chicken breast (leftover), chopped
1/4 C. white onion, chopped
1 piece roasted bell pepper, diced
5 green olives with pimento, diced
1 green onion, diced
1 celery stalk, diced
1 Tbs. salad dressing (i.e. Durkee’s Famous Salad Dressing)
Greek seasoning (i.e. Cavander’s Greek Seasoning)
dash (1 tsp.) Tony’s Chachere’s
1-2 basil leaves, chopped
handful fresh parsley, chopped
Directions
Mix all of the ingredients together in a bowl (the order doesn’t matter). Chill for at least 30 minutes or overnight.
Serve over mixed greens and sliced homegrown tomatoes on the side.

I grew up with this casserole and now I make it for my kids too. It’s a family favorite! It can be made during any season and the recipe can easily be doubled.

Ingredients
l lb. ground turkey or meat
l 12-count pkg. corn tortillas
l can cream of mushroom soup or celery soup
2-3 C. shredded cheddar cheese
l can chopped green chilies
onions to taste
salt and pepper to taste
Mrs. Dash to taste
cumin to taste
1/4 C. milk

Ingredients
1 1/2 Tbs. Kraft Balsamic Vinaigrette with Olive Oil or Kraft Greek Vinaigrette with Olive Oil
Leftover oven-roasted turkey
Lettuce
Tomato
Whole wheat tortillas
Directions
Tear leftover turkey into chunks. Take a tortilla and place lettuce, tomato and turkey on it. Pour 1-1 1/2 Tbs. vinaigrette on top and wrap, making sure you close both ends. Cut at an angle and serve with some low fat cottage cheese or yogurt.

Ingredients
36 wings, cut in half
1 1/2 C. ketchup
1 C. brown sugar
2 Tbs. vinegar
2 tsp. soy sauce
Directions
Parboil wings for 20 minutes and drain. Mix rest of the ingredients together. Pour sauce over wings and make sure wings are covered completely. Line cookie sheet with foil. Lay wings side by side. Pour excess sauce over wings. Bake uncovered at 350 degrees for 30 minutes.

Ingredients
1 1/4 C. water
1 1/2 Tbs. butter
1 box stuffing mix (turkey or chicken)
1 can flaky biscuits
1 lb. chunked turkey
1 envelope turkey gravy
flour
2 Tbs. butter for sealing, melted
Directions
Preheat oven to 350 degrees. For the box of stuffing, combine water and butter and heat up in microwave for 5 minutes. Add stuffing mix and set aside.Lightly flour your work space and roll biscuits out into a flat dough. Place 1 1/2 tsp. of stuffing in the middle. Top with turkey. As you fold one side at a time, seal the fold by brushing with butter. Place on a cookie sheet, fold down, and bake for 23 minutes at 350 degrees While baking, prepare gravy as directed on package.

1/2 C. chicken broth
1 C. teriyaki sauce
3 Tbs. soy sauce
1/4 tsp. crushed red pepper flakes

Place chicken in crock pot. Pour remaining ingredients over chicken. Cover and cook on low for 7-8 hours.

Quick and easy is what this delicious recipe is all about. It is even light enough to serve on warm days too.

Ingredients
2 sm. bags ravioli (or tortellini) (meat or cheese or mixed)
4 C. homemade or canned broth or stock (you pick the flavor)
1/2 C. shredded carrots
1 box frozen spinach, thawed
2 tsp. dried parsley
4 grinds black pepper
Parmesan for garnish
Directions
Cook pasta in salted boiling water about 3 minutes (they will continue cooking in broth). Drain pasta and add back to pot with remaining ingredients. Simmer, uncovered, about 5-8 minutes. You can add sliced chicken breast for a heartier soup. Serve with Keep Away the Vampires Cheesy Garlic Bread.
