This lasagna recipe is a family favorite. It’s quick, easy, and tasty and you don’t have to cook the lasagna noodles beforehand!

Ingredients
1 onion, minced
3 cloves garlic, minced
1 Tbs. Italian seasoning
1 lb. ground turkey or extra-lean ground beef
8 oz. part-skim milk ricotta cheese
2 C. spaghetti sauce (jarred or make your own)
8 oz. lasagna noodles
4 oz. part-skim mozzarella cheese, shredded
4 oz. low-sodium cheddar cheese, shredded
1/2 C. freshly grated Parmesan cheese (#1 blade)
2 Tbs. fresh basil, chopped
Equipment:
10” gourmet fry pan
large sauté skillet with cover
food cutter for julienne and grating blades
measuring cups and spoon

Under cheesy+ creamy+ soups
This is based off of my mom’s broccoli casserole. To make this completely vegetarian, substitute vegetable broth for the chicken broth.

Ingredients
1 C. chopped onion
2 Tbs. butter
1 10 3/4-oz. can cream of mushroom soup
1/2 soup can of milk
3 C. cubed Velveeta cheese
5 C. chicken broth
2 10-oz. pkgs. frozen chopped broccoli, thawed
2 C. cooked rice
Garnish:
shredded cheese
sliced green onion
sour cream
Directions
Melt butter in a heavy saucepot. Saute onions until clear. Add mushroom soup, milk and cheese. Cook until well incorporated. Then add broth, broccoli and rice. Simmer for around 30 minutes.
Garnish with shredded cheese, green onions, and sour cream.

l can cream of mushroom soup or celery soup
2-3 C. shredded cheddar cheese
l can chopped green chilies
onions to taste

Ingredients
2 lb. ground beef
1 large tomato, diced into small cubes
2 packets taco seasoning
3 C. shredded lettuce
2 bricks Philadelphia cream cheese
2 C. shredded Colby/Monterey jack
1 16 oz. sour cream cheese
1 16 oz. jar mild salsa
1 large bag tortilla chips
Directions
Brown beef on medium high heat. When almost cooked, add the packets of taco seasoning and mix well. Remove from heat and let cool. In a bowl, blend together the cream cheese and the sour cream. Once the beef has cooled, layer on the bottom of a 9×13 inch casserole. Layer the cream cheese and sour cream mixture over the beef. Followed by the salsa, tomatoes, lettuce and finishing it off with the Colby/Monterey jack cheese.

Instead of the boring old grilled cheese sandwich try a grilled cheese pizza sandwich with mozzarella and marinara sauce! It tastes just like cheese pizza with less fat and without all the grease and calories! I got bored and decided to try something new….a completely random idea made an awesome lunch!

Ingredients
2 slices mixed grain bread
2 Tbs. marinara sauce
1/4 C. mozzarella cheese (low moisture, part skim)
1 tsp. shredded Parmesan cheese
salt and pepper to taste
Directions
Spread 1 tablespoon of marinara sauce on each piece of bread. Spread mozzarella cheese evenly, on side with sauce, on first piece of bread. Sprinkle Parmesan cheese over mozzarella. Top with second piece of bread, sauce side down. Place in heated pan and cook until cheese inside is melted and outside is golden brown…or darker if you like.

2 cans mushroom soup
2 C. shredded cheese (cheddar or Velveeta)
1 lb. cooked and drained ground beef
2 C. uncooked macaroni
2 C. milk
2 Tbs. minced onions
Salt and pepper to taste
Directions
Mix all together and place in a greased crock pot. Cook on low for 6 hours until pasta is done.
