This is a very simple recipe and a great way to use up apples in the fall.

Ingredients
3 large eggs
1 1/2 C. sugar
3/4 C. vegetable oil
2 C. all-purpose flour
1 1/2 Tbs. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
3 Braeburn apples, peeled, cored and sliced
1/2 C. chopped nuts
Whipped cream or ice cream, for serving (optional)
Directions
Preheat oven to 325 degrees. Grease an 8″-square baking pan. In large bowl, beat eggs, sugar and oil until blended. Add flour, cinnamon, baking soda, and salt; mix until well combined. Stir in apples and nuts. Spread batter in pan and bake 65-70 minutes or until toothpick inserted in center comes out clean.

This recipe was passed down through my family at holiday dinners. Its very easy to make and delicious. It requires a yellow cake mix (pudding in the mix) and a can of pie cherries already prepared.
