This lasagna recipe is a family favorite. It’s quick, easy, and tasty and you don’t have to cook the lasagna noodles beforehand!

Ingredients
1 onion, minced
3 cloves garlic, minced
1 Tbs. Italian seasoning
1 lb. ground turkey or extra-lean ground beef
8 oz. part-skim milk ricotta cheese
2 C. spaghetti sauce (jarred or make your own)
8 oz. lasagna noodles
4 oz. part-skim mozzarella cheese, shredded
4 oz. low-sodium cheddar cheese, shredded
1/2 C. freshly grated Parmesan cheese (#1 blade)
2 Tbs. fresh basil, chopped
Equipment:
10” gourmet fry pan
large sauté skillet with cover
food cutter for julienne and grating blades
measuring cups and spoon

Ingredients
1 10 3/4-oz. can cream of mushroom soup
1 2-oz. pkg. dry onion soup mix
6 med. potatoes, cut into 1-inch pieces
6 med. carrots, thickly sliced
1 4-lb. boneless beef bottom round or chuck pot roast
Directions
Stir mushroom soup, soup mix, potatoes and carrots in a 3 1/2-qt. slow cooker. Top with roast and turn to coat. Cover and cook on LOW for 8-9 hours (or on HIGH for 4-5 hours) or until roast is fork-tender.

This home favorite is a layered dinner pie made with good ground beef, sliced potatoes, sliced onions, chicken broth, seasonings and a flaky top crust. The recipe was modified from one given to my mother in the early 50’s from a lovely Scandinavian woman. It’s great for leftovers if there are any!

1 1/2 - 2 lb. good ground beef
2-3 large russett potatoes
1-2 large yellow onions
1 can chicken broth or stock
1 pre-made or homemade pie crust
salt, pepper and garlic powder to taste
flour to coat bottom of baking pan and enough to gently sprinkle each layer

This is a quick and delicious no-fat, no-carb dessert. Warm out of the oven, it’s like eating a chocolate kiss!

Ingredients
3 egg whites
1/8 tsp. salt, optional
1 C. sugar
2 tsp. water
1 tsp. vanilla extract
3 Tbs. unsweetened cocoa
Directions
Add whites and salt to bowl and with mixer, beat until peaks form. Add 1/2 cup sugar and combine. Combine water and vanilla in cup and gradually add to mixture, alternating with sugar. Add cocoa and combine well. Drop onto cookie sheet by teaspoon. Bake 30 minutes at 250 degrees. Remove to cooling rack and store in airtight container. If they are too hard they are over cooked.

l 12-count pkg. corn tortillas
l can cream of mushroom soup or celery soup
2-3 C. shredded cheddar cheese
l can chopped green chilies
onions to taste
salt and pepper to taste
Mrs. Dash to taste
cumin to taste
1/4 C. milk

4 C. zucchini, shredded
1 large onion, chopped
4 C. smashed crackers
4 eggs
1 stick butter
2 Tbs. marjoram
1 1/2 C. mozzarella cheese, grated
Directions
Preheat oven to 350 degrees. In a large bowl, mix all ingredients together. Spray a 9×13 pan and place ingredients in it and bake for 30-45 minutes or until done.

I make this a lot during summer months. Season as you would stuffed green peppers. Simple for dinner and uses those big zucchini!

Ingredients
1 large zucchini
1 can chopped tomatoes
1 C. cooked rice
1 lb. hamburger meat
1 medium chopped onion
Cheese (optional)
Directions
Slice zucchini in half and scoop out seeds. Brown hamburger and onions and drain. Add remaining ingredients and mix together in same pan. Fill zucchini boats and top with favorite cheese. Bake on a cookie sheet for 30 minutes at 350 degrees F.

Ingredients
1 1/2 Tbs. Kraft Balsamic Vinaigrette with Olive Oil or Kraft Greek Vinaigrette with Olive Oil
Leftover oven-roasted turkey
Lettuce
Tomato
Whole wheat tortillas
Directions
Tear leftover turkey into chunks. Take a tortilla and place lettuce, tomato and turkey on it. Pour 1-1 1/2 Tbs. vinaigrette on top and wrap, making sure you close both ends. Cut at an angle and serve with some low fat cottage cheese or yogurt.

These chicken wings are easy, inexpensive and great for parties! They also taste very good!

Ingredients
36 wings, cut in half
1 1/2 C. ketchup
1 C. brown sugar
2 Tbs. vinegar
2 tsp. soy sauce
Directions
Parboil wings for 20 minutes and drain. Mix rest of the ingredients together. Pour sauce over wings and make sure wings are covered completely. Line cookie sheet with foil. Lay wings side by side. Pour excess sauce over wings. Bake uncovered at 350 degrees for 30 minutes.
