Ingredients
* 1 1/4 C. Swedish pancake mix
* 1/2 C. chives
* 6 large eggs
* 1/2 tsp. salt
* 1/2 tsp. pepper
* sour cream
Directions
Prepare pancake mix according to package directions. Let it thicken while you chop chives. Stir in chives. Heat a nonstick skillet over medium-low heat and when pan is hot, pour in 1/4 cup of batter. Quickly circle batter around the skillet, creating a thin layer or batter over surface. Cook crepes on each side, but remove before browned. In a bowl, add eggs, salt, and pepper. Beat with a fork and pour into same pan over low heat. When eggs are done spoon eggs inside each crepe, spread sour cream inside, roll, and enjoy! Feel free to add your favorite cheeses or vegetables into the mix, as well.
