If you like baked potatoes in the microwave, try a baked squash!

Ingredients
Squash
Butter
Chives
Pepper
Garlic Salt
Directions
Just like a potato, pierce the skin of the squash with a fork or knife to well ventilate. Put on a plate and microwave on high according to the size of the squash, turning over about every 2-3 minutes. (I used a small butternut squash and it took about 7 1/2 minutes to fully cook. Add more time for larger squash.)

This is always a hit at potluck! Quick, easy and very tasty! Different than the same old spaghetti!

Ingredients
1 lb. spaghetti
1 C. chopped onions
1/2 C. chopped bell pepper
2 lb. lean ground beef
2 16-oz. can diced tomatoes
1 4.5-oz. can mushrooms, drained
1 tsp. dried oregano
1 tsp. dried basil
2 C. shredded cheddar cheese
1 10.75-oz. can condensed cream of mushroom soup
1/4 C. grated Parmesan cheese

This is an amazingly flavorful dish because of the large amount of roasted garlic… mmm!

3 Tbs. olive oil
1 1/2 lb. baking potatoes, peeled and cut into cubes
1 1/2 lb. yams, peeled and cut into cubes
1/2 C. milk
1/4 C. butter or margarine
1/2 tsp. dried rosemary
1/2 C. grated Parmesan cheese
Salt
Ground black pepper
