Buck’s Pinto Beans Recipe

Ingredients

Pinto beans
1/2-3/4 lb. bacon
1-2 onions
5-6 cloves garlic
1-2 bunches cilantro
Salt and pepper to taste
Chilies (optional)

Directions

Soak beans overnight, making sure to put enough water to cover beans all night. Once you start cooking never add cold water to beans that are cooking, always heat water to almost boiling before adding to beans. Cook beans and do not add any seasoning. When they are soft all the way through you then start with the seasonings. Either buy ends and pieces or cut bacon into small pieces and cook on the stove until the bacon is almost done, then add onions and cook until onions are almost done and then add fresh garlic. Continue cooking for about 5 minutes and then add 1-2 bunches of cilantro and cook for another 3-4 minutes.

Pour everything in the skillet into the bean grease and cook on medium low for 1-3 hours or less. If you have too much liquid, cook without lid. If the liquid is how you want it, cook covered and turn heat to low.
